Wow ! forgot how much research you put into this blog(not to mention all those Italian noodles, German spatzle, American mac ‘n’ cheese,etc.,etc.). You neglected some favorites of mine:Singapore fried vermicelli; beef, broccoli and wet rice noodles,;dry fried beef rice noodles; Shanghai preserved snow cabbage and shredded pork;and Beef Brisket noodles(although the Taiwanese Beef noodles sorta represent this). I vote for Pho because the depth of flavour from a clear soup broth is amazing, the raw beef and Thai basil, lemon, chilies, bean sprouts, and fresh rice noodles is terrific. Also the foodie journey is endless with all the Pho houses around. I find most ramen broth too strong in pork flavour, northern and Taiwan beef stock broths can’t come close to Pho and Cantonese broth. The beautiful mild chicken stock for preserved veggies and pork noodles at the Suhang and Shanghai Wonderful are delicate and understated. Noodles, the Asian equivalent to the sandwich, Cantonese eat only at lunch, not supper(raised in North America, how was I to know?…ordered this at supper and got laughed at by Chinese friends)and sometimes as a late snack on the 10:00 PM menus for small bites. You sure put a lotta work in this. I’d hate to see how many entries you’re going to have when we vote for your fav dessert.
