Watermelon, Blueberry, Feta & Mint Salad with Pomegranate Champagne Vinaigrette Recipe

This is another dish from my “Something Blue” Menu I made for my sister’s bridal shower last week. I had requests for the recipe which surprised me because it was so simple. I hope I didn’t scare anyone off with the complexity of the Blueberry BBQ Roast Chicken & Blueberry Corn Salsa Croissants recipe, but this one will help balance it out. It’s easy and can be made in advance. An excellent dish really requires only good quality fresh ingredients and love while making it.

Inspiration

Watermelon and feta salads aren’t anything new, but I think one of my first ones was at Romer’s Burger Bar a few years ago. I’m a fan of sweet and savoury and this really takes the cake when it comes to sweet and savoury. If you’ve never had watermelon with salt before you should try it. Salt just makes the watermelon sweeter and it helps with ones that aren’t as flavourful.

I’m also really happy that I finally know how to pick a good watermelon. People used to tell me that smacking the watermelon and feeling the vibration would tell me how sweet it was and I never understood the technique. I finally got it though! To be honest I’m not even strong enough to pick one up by myself, but with a little help picking it up I’m fairly confident I can choose an excellent watermelon.

The inspiration for this was colour. I wasn’t really doing anything new with the ingredients, but I wanted a colourful salad that wasn’t a typical fruit salad. I knew I had to use blueberries (theme of my menu), but I didn’t want a typical watermelon feta salad either. I decided to go with a pomegranate champagne vinaigrette since it was a bridal shower and I wanted something elegant and fun. It’s a refreshing and healthy salad with a sweet, acidic and salty balance.

Watermelon, Blueberry, Feta & Mint Salad with Pomegranate Champagne Vinaigrette Recipe

**My measurements are an estimate. Use only as a guide and apply according to personal taste.

Watermelon, Blueberry, Feta & Mint Salad

  • Half a watermelon
  • 3 cups of blueberrries
  • 2 cups of feta
  • 10 mint leaves

Pomegranate Champagne Vinaigrette

  • 3/4 cup extra virgin olive oil
  • 1/4 cup champagne vinegar
  • 2 tbsp champagne
  • 1/4 pomegranate juice
  • 1 tbsp shallots (optional)
  • Salt and pepper to taste
  • Add honey if you prefer sweeter
Directions:
1. Cut watermelon and half the feta into cubes. Crumble the remaining feta.
2. Toss the watermelon, feta and blueberries.
3. Chiffonade the mint leaves and toss in last minute.
4. Whisk all the ingredients for the salad dressing and puree in blender to combine if you wish.
5. Add honey if you prefer the dressing a bit sweeter.
6. Toss the salad with the pomegranate champagne vinaigrette.
7. Chill until ready to serve.
Follow Me Foodie’s Tasty Twist:
1. Serve it as an appetizer by filling some Belgian endive leaves with the watermelon salad.
2. Have it for breakfast on top of Greek yogurt, or regular strained yogurt. Drizzle with honey if preferred.
