Lemon Coconut Old-Fashioned Cake Donuts with Pure Leaf

I had the pleasure of trying these Lemon Coconut Old-Fashioned Cake Donuts at the 7th Annual Garlic Fest at The Sharing Farm at Terra Nova Park this weekend. It was one of the featured dessert booths on the farm and after trying one, I knew I had to get the recipe to share.

I’m fortunate to not have food allergies, so I don’t have dietary restrictions, and was surprised to find that these Lemon Coconut Old-Fashioned Cake Donuts were gluten-free and dairy-free. Well, I wasn’t surprised they were gluten-free considering they were made by the fabulous chef Jen Peters of NextJen Gluten Free, but the dairy-free was unexpected. They’re also baked instead of fried… which means go have another!

I enjoyed them paired with Pure Leaf Lemon Tea, and I’m actually inspired to test out a coconut iced tea recipe now… heading to the test kitchen now! 😉

Lemon Coconut Old-Fashioned Cake Donuts

Ingredients

Lemon Coconut Old-Fashioned Cake Donuts

1 cup (200g) Coconut fat
3 Lemons (only zest)
½ tsp. (2.5g) Salt
7/8 cup (200g) Sugar
¼ cup (50g) Brown Sugar
5 Eggs
3 tbsp (50 g) Vanilla
3 tbsp (50g) Lemon Juice
2 cups (275g) Nextjen Gluten-free All Purpose Baking Blend
2 tsp (12.5g) Baking powder

Icing

10g Vanilla
15g Lemon juice
250g icing sugar
1 lemon zest
Pinch salt
½ Vanilla bean

Method

1. Preheat oven to 325F.

2. In the mixer with a paddle attachment cream together coconut fat, lemon zest, salt and both sugars until fluffy, 2-3 min.

3. Beat in eggs one by one.

4. Add approximately ½ the flour and mix together on low speed, until incorporated. Add lemon juice and vanilla to the batter and mix together.

5. Mix baking powder with remaining Nextjen Gluten-free All Purpose and add to the batter mixing on low speed to incorporate.

6. Scoop into donut shaped moulds (Savarin).

7. Bake for 10-12 min (internal temperature of 180F with a digital probe thermometer) Test with a toothpick, the toothpick should come out warm and clean.

8. Mix icing ingredients together until smooth. Add more lemon or vanilla according to taste.

9. Dip donuts into icing and enjoy!
