Calgary, AB – Basil Ultimate Pho and Fine Vietnamese Cuisine (“Best Satay Pho”)

It was off the beaten path just outside of downtown in a mall complex and it is not a restaurant people visit out of convenience. People come here for the pho and specifically their signature sate pho. They come here to satisfy a craving which apparently other Vietnamese restaurants can’t compete with.

Sous Vide Asian Pork Ribs with Crispy Pineapples & Roasted Peanuts Recipe

The ribs were garnished with chopped mint, Thai basil, cilantro, green onions, chopped roasted peanuts and crispy pineapple chips. I served the pork and pineapple with steamed rice but it would also be delicious with noodles. The meat could also be removed from the bones, shredded, and incorporated into an Asian salad.

Come with an open mind and don’t come seeking authenticity, although they don’t take you for an idiot. This is more French style Vietnamese food with modern Canadian flair. Vietnam was a French owned colony and her inspiration also comes from living in Canada for over thirty years. The style is different, so come with the right mind set.

Broken Rice (Modern Vietnamese Restaurant) – Desserts

The desserts at Broken Rice are traditional and modern, but made with care and thought. Some are original to the restaurant and I would recommend trying some because they are different, but I’m not sure if it is something I would have to order again. All ice cream and sorbets are made in house.

There are no short cuts here. Their passion to do something different and creative may come across as “fusion” or “Western”, but there is a lot of thought and professional execution going into their recipes, quality of ingredients and end presentation. The dinner menu offers more creativity.

This was no trap, this was just Vietnamese done differently. No, it’s not quite fusion, but it is modern and more upscale for the area. The recipes are catered a bit for Western tastes, but it is not watered down and they are not taking lack of familiarity with Vietnamese food to their advantage.

The menu might not look as exciting or creative as some of the other food trucks, but give it a chance. It is typical Asian comfort food and their potions are enough for two. All sauces and marinades are made from scratch and it is one of the most budget friendly food trucks offering great value in Vancouver.
