The salmon we used was Haida Gwaii line-caught Northern Coho salmon. Sous vide salmon is also one of Mijune’s favourite ways to eat salmon next to having it sashimi. Since #DinnerPartyYVR took place in the fall, the salmon would be incorporated into a warm soup dish. Mijune liked the idea of making a velouté, which means velvet in French.

By “most locally recommended” I mean in the first 2 days I had at least a few recommendations for them from locals. I almost thought there were only 6 restaurants in town. The Yukon Territories is not a culinary destination yet, but that doesn’t mean there is nothing going on. While the Northern Lights and local activities such as dog sledding are the main tourist attractions, the food scene isn’t too shabby.

Calgary, AB – Teatro Restaurant (Fine dining) – Part 4/4

As a well established restaurant it sits comfortably without feeling dated. The a la carte menu sounds ordinary and it may not offer items you could not necessarily find somewhere else, but the food was elegant, polished and reliable. It was approachable and safer than expected, but it tasted excellent which is most important and I could confidently recommend some dishes.
