It’s the 35th World Association of Chefs Societies (WACS) in Daejeon, Korea and Chef Tobias MacDonald from La Belle Auberge is the representative for the Americas. I was honoured to be invited to attend Chef Tobias’ final practice run for his Global Chef’s Menu at La Belle Auberge.

It’s a small restaurant that blends in on the strip and it didn’t look like anything special, but it is Thai owned and operated. The food was surprisingly very good and it was made with Thai ingredients and served more or less authentically. It was a pleasant surprise in Burnaby Heights!

Fried chicken has been the craze for the last few years in New York and the one at Peels has made several “Top 10 Best Fried Chicken in New York” lists. The menu features gourmet comfort food and American regional classics and it was an eclectic approach to farm to table dining.

It’s an Ice Cream Cake 2.0 and it’s more Rachel Ray than Martha Stewart. You can make it more Martha Stewart by making your own ice cream, cake and chocolates, but that’s not the point of this recipe. You’re supposed to use up your leftover chocolate!

The brunch was all quite rich without necessarily being hearty, and many dishes were reminiscent of Southwestern classics, but presented in a West Coast style. At times the dishes seemed a bit repetitive, but it was still enjoyed.
